Because VCO can be costly, and in some places very hard to find, there are some people who just cannot afford to buy it for all their cooking needs. If that is the case, you might try buying Lou Ana’s Coconut Oil. It has been processed, so it has no coconut flavor, but it is not hydrogenated, so it is still better than ordinary vegetable oils. In our area we can find Lou Ana’s Coconut Oil at Wal-Mart, and it is very inexpensive (about $3.00 a bottle).
I usually have both on hand. If I am deep-frying something like chicken for dinner, and need a large quantity of oil, I will use Lou Ana’s. If I just need a smaller amount, for instance to fry an egg, and I want the delicious taste of the virgin coconut oil, then I will use that. (Eggs fried in virgin coconut oil are excellent!)
One of the best ways to get your daily coconut oil is just to buy a coconut. You can crack it open and just eat it raw, grate it and cook with it, or add the meat and coconut water to smoothies. I have found that I get the best dieting results from eating the coconut raw. All the enzymes from the coconut are still there, which adds to the benefits. If you don’t have fresh coconuts available in your area, get unsweetened dried grated coconut from your health food store or online. You can just add this to your food, or you can make coconut milk out of it. This homemade coconut milk is much less costly than the imported canned kind, and works just as well.
